Eye of the Tiger Espresso

Profile:

Presenting the sixth version of Eye of the Tiger Espresso. This seasonally changing espresso may feature a single coffee or be a blend; this edition is decidedly a blend. Normally we have a restrained approach when blending coffees; two or three coffees is usually enough to develop the flavor profile we desire. This time, Eye of the Tiger combines five coffees, with a captivatingly complex result.

The blend highlights a citrusy Kenya coffee, processed at the Ichamama wet mill by members of the Othaya Farmers’ Cooperative in the Nyeri growing region. Brightness in the cup is balanced by a nuanced, natural processed Brazil coffee from São Benedito, a farm located in the Carmo de Minas growing region. For body and sweetness a fully washed Colombia coffee from farms around the municipality of San Agustín in the renowned Huila growing region. Finally we added two rich-toned coffees from India, one fully washed and one natural process. Produced by Sethuraman Estates in the Chikmagalur district of Karnataka, the only farm in the world to have received an “R” certification for three different coffees. This certification is granted by the Coffee Quality Institute to honor the world’s finest Robusta species coffees.

Together the coffees in this blend result in a forceful cup with a complex array of flavors. We have been enjoying this coffee on its own, as a straight shot of espresso, but find the complexity shows itself particularly well in milk.

We will roast this version of Eye of the Tiger as long as the blend components last.

Cupping Notes:

Broad and complex with flavors that include sweet orange, toasted nuts, baking spices and dried apricot.
