We worked with Chef Thomas Keller for several months creating this latest rendition of his namesake espresso blend. The design unfolded in segments, as we calibrated elements of the blend - roast style, mouth-feel, fruit aromatics, flavor base notes. The pursuit of the perfect ratio of elements seemed, at moments, like chasing an elusive quarry that revealed promising fragments at first, then, finally rewarded us with an artfully integrated cup.
