Snow Leopard Blend
Snow Leopard is a seasonal blend that gives us the opportunity to take single origin coffees we enjoy on their own and combine them in unique ways to create something delicious!
This iteration is built around a coffee from Finca Santa Sofia in Guatemala’s Cobán growing region. Although his family had been farming coffee for three generations, Pablo founded his very own farm, Santa Sofia in 1991. The farm’s unique terroir makes it especially complicated to produce high quality coffee. Irregular rainfall patterns cause flowering to occur sporadically throughout the year, so coffee has to be harvested and milled almost continuously. This coffee gives the blend structure and depth, while adding flavors of warm spices.
We then added a coffee from a one-hectare farm located on the slopes of Mt. Santa Barbara above Lake Yojoa in Honduras. We recently toured the small farm while visiting the Paz family and their mill, San Vicente, which is situated in the town of Peña Blanca at the base of the mountain. A few years ago, farm owner Maria Dolores Baide replanted her farm with the Paranaima variety coffee, a disease resistant Sarchimor variation developed by the Honduran Coffee Institute. This disease resistant variety has been found to produce high-quality cup profiles. After one farmer won Cup of Excellence with Paranaima a few years ago, many producers in the region began planting the variety more widely. This coffee’s uniquely intense acidity helps to bring out the flavors of the other coffees in the blend.
To finish the blend, we included a natural-processed coffee from Finca Buenos Aires in El Salvador. We have been working in collaboration with renowned producer Aida Battlle for many years, experimenting with different processing methods from Finca Buenos Aires. Aida burst onto the specialty coffee scene after placing first in El Salvador’s inaugural Cup of Excellence Competition in 2003. The fruit-forward and sweet flavors of this coffee help to round out the blend and add complexity.
This version of Snow Leopard will only be available for a limited time -- as long as supplies of the component coffees last. This seasonally evolving blend is available on an ongoing basis.
