Origin Story

Multiple Producers

Decaf Guatemala Familia Primavera is a blend of coffees from two growing regions in Guatemala, Huehuetenango and Jalapa. We purchased the coffee through our partners at Primavera Coffee, an importing company with deep roots in Guatemala. Primavera and sister exporting company, La Central de Cafe, were both founded by Nadine Rasch, who grew up on her family’s coffee farm. After studying and working in finance in the UK, she returned to Guatemala to work on the family farm and now also processes the coffee of smallholder for many other smallholder producers.

75% of the blend is made up of coffees from smallholder producers in the Las Brisas area of Jalapa. This coffee’s richness and chocolate-forward notes create a foundation for the the blend’s other more nuanced component, which was produced by farmers in the renowned Huehuetenango region. While only making up 25% of the blend, this coffee’s lively acidity and sweet, fruit-forward flavor profile perfectly complement the deeper toned coffee from Las Brisas, culminating in a balanced blend that is sure to satisfy those who are sensitive to caffeine, but also looking for a lighter roasted decaf coffee with a nuanced flavor profile.

Why We Love This Coffee

This coffee was decaffeinated using the Swiss Water Process of caffeine extraction, without the use of chemical solvents. The coffee soaks in a water saturated green coffee extract that contains soluble coffee components just under equilibrium with that of the coffee beans, so soluble coffee components such as caffeine, only flow out of the beans and into the extract. The caffeine laden extract then passes through activated carbon filters that catch the caffeine molecules and the process is repeated until the beans are 99.9% caffeine free.
