Snow Leopard Blend
Snow Leopard is a seasonal blend that gives us the opportunity to take single origin coffees we enjoy on their own and combine them in unique ways to create something delicious!
This iteration is built around a coffee from Finca Santa Sofia in Guatemala’s Cobán growing region. In March of 2017 we had the opportunity to visit Santa Sofia in person with farm owner Pablo Ferrigno. Although his family has been farming coffee for three generations, Pablo founded his own farm, Santa Sofia, in 1991. The farm’s unique terroir makes it especially difficult to produce high quality coffee. Irregular rainfall patterns cause flowering to occur sporadically throughout the year, so coffee has to be harvested and milled almost continuously. This coffee gives the blend structure and depth, while adding flavors of warm spices.
We then added a coffee from a small one-hectare farm located on the slopes of Mt. Santa Barbara above Lake Yojoa in Honduras. We discovered this coffee while visiting the Paz family and their mill, San Vicente, which is situated in the town of Peña Blanca at the base of the mountain. Until partnering with the Paz family and joining their micro lot program two years ago, farm owner Maria Adilia Trochez had been selling her coffee into the commercial market. Now, we are buying Maria’s entire production of specialty coffee each season and because of her hard work and dedication to quality, the price she receives is three times what she used to sell her coffee for. This beautifully balanced coffee adds complexity to the blend with its fruit-forward flavors.
To finish the blend, we added a coffee produced by smallholder farmers of the Murue Farmer’s Cooperative Society, located in Embu County, Kenya. This particular lot comes from growers around the Ngurueri washing station, which has been processing coffee for over forty years. The coffee’s meticulous processing creates a bright and clean flavor profile giving the blend a vibrant acidity.
This version of Snow Leopard will only be available for a limited time -- as long as supplies of the component coffees last. This seasonally evolving blend is available on an ongoing basis.
