Origin Story

Named in honor of the Pyrenees, the mountain range that serves as a natural border between Spain and France, Finca Los Pirineos is the mountainous divide between the coffee towns of Santiago de María and Berlín, located in central El Salvador on the slopes of Tecapa Volcano. By some accounts, cultivation of coffee on the farm started in 1890, but whatever the exact date, the farm has been owned by the Baraona family for well over a century.

Although specializing in heirloom variety Bourbon, an additional 94 varieties of coffee are maturing in a test nursery next to the mill. Initial results of these experimental plots are beginning to come in, with the goal of identifying the best varieties for planting elsewhere on the farm. In the coming years, we look forward to seeing how these new coffee varieties naturalize on the farm.

Why We Love This Coffee

We are happy to present another fine coffee from Finca Los Pirineos, a testament to the long-lasting partnership with the Baraona family that started over a decade ago. This natural processed Sudan Rume variety lot is the last of three coffees that we will be featuring from Finca Los Pirineos this year. In the natural (or dry) method, the coffee is not pulped after harvesting and the fruit is allowed to dry whole on the beans, resulting in intensely fruity flavors.

Sudan Rume (also known as Rume Sudan) is an ancient heirloom variety, originating from the Boma Plateau of present-day South Sudan. The plateau is located on the Ethiopian border, where the variety still grows wild in the region’s forests. Historically cultivated for use as genetic material in the hybridization process; its great cup quality, broad genetic pool and disease resistance has long contributed to better known hybrids such as SL28. Due to its relatively low yields, we tend not to see Sudan Rume propagated widely.
