Origin Story

Luis and Oscar Monge

For many years we have been offering coffee from the award-winning farms belonging to brothers Luis and Oscar Monge. In addition to a group of small farms located throughout the Tarrazú growing region, the brothers also operate La Lia mill, where their coffee is processed. The mill was built in 2007 during the infancy of what has been coined the “micro-mill revolution” by our friends at Exclusive Coffees, who have played an integral role in its success. Historically, producers would sell their coffee to larger mills where it would be blended with other lots, and their compensation would often depend on volatile commodity prices. About 15 years ago, producers began constructing their own small-scale mills and processing their own coffee, gaining access to higher and more stable prices.

This year, we are featuring a pair of Catuaí variety lots processed at La Lia mill using the honey method. The one comes from a farm called El Dragon.

Why We Love This Coffee

Like fully-washed coffees, honey processed coffees are pulped after harvesting, however trace amounts of fruit are left clinging to the beans. The honey process gets its name from the sticky, honey-like appearance the residual fruit gets as it dries. The coffee is then placed on raised beds where it was cared for meticulously to promote even drying. High altitude, careful processing, and a host of other factors combined to yield this coffee’s sweet, balanced, and complex flavors. We are proud to offer this great tasting coffee from producers we have worked with for so many years.

After initially tasting this coffee on the cupping table we knew that we wanted to taste it as espresso, and we were blown away by its intense sweetness and delicate nuance! While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
