This is our first ever coffee from The Madrid family, who have been producing exceptional coffee for three generations in the picturesque Santa BĂ¡rbara department of western Honduras.

This natural-process, Pacamara variety coffee comes from their farm Finca Las Vegas and immediately stood out on the cupping table with sweet notes and a creamy body.

Origin Story

Franklin Madrid

The Madrid family has been producing exceptional coffee for three generations in the picturesque Santa BĂ¡rbara department of western Honduras, on the mountain slopes above Lake Yojoa. This region is renowned for growing some of the country's finest coffees, consistently earning top honors in Honduras’s annual Cup of Excellence. This particular lot was produced by Franklin Madrid, who won the prestigious competition in 2008. Franklin owns and manages several farms, including Finca Las Vegas, where this coffee was grown.

This coffee is the result of a collaboration with Beneficio San Vicente, a coffee mill founded by the Paz family in the town of Peña Blanca, where many top-performing coffees are expertly processed. Benjamin, Arturo, and David Paz play a vital role in the region—not only by helping farmers export their coffee, but also by providing technical support and access to financing. One of their most valuable services is helping growers assess the quality potential of their coffee. This guidance allows farmers to make informed decisions about whether it's worth investing limited resources to target the specialty coffee market.

Why We Love This Coffee

This Pacamara coffee was processed using the natural, or dry, method—which doesn’t require fresh water. After harvesting, the whole coffee cherries are left to dry intact on the beans, imparting distinct fruity notes to the final cup.
Pacamara is a cultivar that is a cross between the Typica derived Maragogype variety, which produces very large beans, and Pacas, a compact-growing selection of the heirloom variety Bourbon. As a result of this parentage, Pacamara plants are small in stature, but produce enormous beans known for their high cup quality and being notoriously challenging to roast.
