Why We Love This Coffee
For years, Equator has offered a natural processed coffee from Ethiopia on our single origin menu year-round. Many will remember Ardi—a fixture on our menu since 2013, known for its vibrant character. Ethiopia Sun Dried Natural continues that legacy, echoing the same distinct flavor profile: a syrupy, blueberry-like sweetness, complemented by floral jasmine notes, and grounded by a smooth, chocolatey finish.
In the natural process, coffee cherries are left to dry whole, the fruit encasing the bean as it imparts its flavor while drying. The result is a cup layered with ripe, berry-like fruit tones. Guided by Ismael’s practiced hand, this expressive profile remains balanced—enhancing, not eclipsing—the delicate floral notes that define Ethiopia’s heirloom varieties.
The heritage of Arabica coffee cultivated on farms around the world, traces back its origins to a small number of trees native to the highlands of Ethiopia. This East African country is not only the birthplace of Arabica but also home to a vast array of indigenous, or landrace, varieties that thrive in its diverse landscapes. As a result, Arabica trees grown outside Ethiopia typically show far less genetic diversity than their Ethiopian counterparts. This genetic richness is a key reason Ethiopian coffees are so highly prized—renowned globally for their exceptional quality, depth of flavor, and remarkable complexity.
