Origin Story

Café Granja La Esperanza

Located in the Valle del Cauca region, in the mountains above Caicedonia, Finca Potosí is the founding farm of the award-winning Café Granja La Esperanza family. Finca Potosí is known for its ideal growing conditions, and this particular lot is processed using the natural method where the coffee cherry encases the seed during processing, instead of being depulped.

The cherries are then fermented in an aerobic process for 24 hours, followed by a second anaerobic fermentation for 72 hours, enhancing the flavor complexity. Finally, the cherries are dried for 8 to 12 days at a controlled temperature in specialized mechanical dryers named “Tres Dragones” (three dragons).
