Sweet & tropical, this light roast single origin coffee comes from producers José Hernán Salazar Benavides and Marina Elina Ansasoy and their farm, Finca La Guaca.

After a memorable outing in the 2020 Colombia Cup of Excellence competition for "Ají", the unidentified coffee variety discovered by José and Marina, an analysis revealed this coffee to be a previously undocumented heirloom variety originating from Ethiopia, the birthplace of Arabica coffee.

Origin Story

José Hernán Salazar Benavides & Marina Elina Ansasoy

This unique coffee was produced by José Hernán Salazar Benavides and Marina Elina Ansasoy at their farm, Finca La Guaca, located in the town of Pitalito in southern Colombia. When José took over the farm in 2001, it was sparsely planted with coffee trees. The previous owner mentored him in proper processing techniques and farm management. Today, José focuses on harvesting and fermentation, while his wife, Marina, manages the washing and drying of the coffee. In addition to coffee, the family also grows plantain, yucca, beans, corn, and tomatoes for personal use and supplemental income.

Why We Love This Coffee

José and Marina’s coffee first came to our attention at Colombia’s Cup of Excellence competition in 2020, where we purchased it through the auction. This lot features a rare variety known as “Ají,” the Spanish word for chili pepper. José named it after noticing the spicy aroma of its cherries—an unusual characteristic that also carries through subtly in the cup, giving this coffee a truly one-of-a-kind flavor.

After questions arose about this obscure variety during the competition, the Cup of Excellence team commissioned testing by RD2 Vision, a coffee research and development company based in France. Their analysis revealed that “Ají” is a newly discovered Ethiopia Landrace—a previously undocumented heirloom variety originating from Ethiopia, the birthplace of Arabica coffee.
