Origin Story

Edilberto Caicedo Luna

Edilberto Caicedo Luna lives on his farm, Los Helechos, with his wife. Together they harvest the coffee at optimal ripeness. Afterwards the coffee is depulped and moved to tiled fermentation tanks to ferment for about 12 hours. They use the fermaestro tool to identify when the ideal fermentation has been reached. The coffee is then washed to remove any remaining mucilage.

The drying process has two steps; the first is on a cement patio, after which the coffee is moved to African raised beds to finish drying the coffee. Luna has found that this two-step process helps him manage the temperature at which the coffee is dried.

Why We Love This Coffee

Every year, the Federación Nacional de Cafeteros (FNC) hosts the Best of Cauca auction, inviting producers from throughout the region to submit their coffees for a juried evaluation. Jurors top lots are then auctioned to buyers from around the world. Equator’s Director of Coffee, Ted S., attended this year's auction as a cupper and a buyer.
