Originally developed as a decaffeinated espresso offering at our cafes, Decaf Eye of the Tiger is a seasonally evolving chemical-free decafespresso blend that features in-season coffees. We think of it as a delicious espresso that just happens to be free of caffeine.
Our latest addition is delicately floral & fruit-forward, pairing decaffeinated washed-process coffees from Colombia and Kenya!
This iteration of Decaf Eye of the Tiger Espresso features a fully washed coffee grown by smallholder farmers in the Popayán region of Western Colombia. While decaffeination methods have significantly improved over the past few decades, many decaf coffees still suffer from muted or muddled flavors. This one is an exception and retained much of its original sweetness and body, enhancing the blend’s nuanced flavor profile and lending a velvety texture to the espresso.
To complement the deeper-toned Colombian component, we included a natural-processed coffee from Ethiopia’s Chelbesa community. Renowned for its rich soil and high elevations, this area offers ideal growing conditions and is one of the most celebrated coffee-producing regions in the country. After harvesting, the coffee cherries were dried whole on the beans, a method that imparts vibrant and fruity flavors. These notes add complexity to the espresso and bring a bright balance to the Colombia’s richer profile.

Why We Love This Coffee
Decaf Eye of the Tiger is a seasonally evolving espresso blend crafted with fresh, in-season coffees. Originally developed for our cafés, this decaffeinated blend remains a staple at all of our locations across California. We think of it simply as a delicious espresso—one that just happens to be decaffeinated. Both components are decaffeinated using a chemical-free water process.
Because decaffeinated coffees undergo an intensive process that can compromise the beans’ structural integrity, we apply gentle, carefully controlled heat to highlight the coffees’ inherent flavor characteristics—especially important when the coffee is intended to be brewed as espresso.
While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
