    In this latest iteration of our Decaf Eye of the Tiger Espresso, we’ve combined two coffees from Latin America for an espresso greater than the sum of its parts.

    The star of the blend is a natural process coffee from Fazenda Um, a Brazilian farm in the Sul de Minas region. The farm was purchased by Stefano Um in 2009, who quickly became focused on producing high quality specialty coffees. In 2015, his sons Boram and Garam Um entered the specialty coffee industry, founding a cafe and roastery in Saõ Paolo. Garam is a World Brewers Cup finalist and Boram is the 2023 World Barista Champion.

    The family focuses on sustainable farming practices, advanced drying techniques, and experimental processing. This lot of Mundo Novo coffee is planted among shady areas in lush volcanic soil, and farmed using organic practices. It is milled at Floresta Armazens Gerais, where it is naturally processed, dried 25 days on shaded raised beds and another 16 days on patios. It was decaffeinated using the water process method by Swiss Water in Canada.

    To compliment the sweet and creamy coffee from Fazenda Um we added a washed coffee from Mexico’s Chiapas & Oaxaca states. It’s apple cider-like acidity and flavor reminiscent of baking spices, such as cinnamon, create an inviting base for espresso preparations. This coffee was decaffeinated using the water process method at DESCAMEX in Mexico.

    Decaf Eye of the Tiger is a seasonally evolving espresso blend crafted with fresh, in-season coffees. Originally developed for our cafés, this decaffeinated blend remains a staple at all of our locations across California. We think of it simply as a delicious espresso—one that just happens to be decaffeinated. Both components are decaffeinated using a chemical-free water process.

    While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
