Origin Story

Smallholder Producers from Buenavista Loxicha Community

This coffee is sourced from families living in the community of Buenavista Loxicha within the municipality of San Agustin Loxicha. These smallholder producers cultivate coffee on just a few acres of land within a lush cloud forest intercropped with bananas, corn, beans, and fruit trees. This is the Oaxacan coffee growing region known as the zona Pluma, within the Sierra Madre del Sur coastal mountain range.

These producers work with Garra de Jaguar, which facilitates transportation of dried parchment to the dry mill facility where coffee is received, cupped and selected for export. Garra de Jaguar ensures traceability and quality control throughout the post harvest process, which is a vital resource for establishing higher prices for these small producers.

Why We Love This Coffee

We have received many requests from our customers for coffee from Mexico. Our coffee sourcing team was delighted to come across this beautiful Oaxacan lot, which they immediately loved on the cupping table.

Our Head Roaster, Michelle F., developed the roast profile for this coffee. “What really surprised me, tasting the sample of this coffee, was how much berry-like sweetness this coffee displayed, which is a rare quality in washed processed coffees. I wanted to make sure to highlight that note while also bringing out the cocoa and spice notes that so many people love in coffees from Mexico. A longer maillard phase during the roasting process really helped highlight both sweetness and body in this coffee.”

While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
1:2.5 coffee to water ratio in 23-25 seconds
