Origin Story

Cristobal Cordova Jiménez

Cristóbal Córdova Jiménez is a coffee producer from Chirinos, San Ignacio, in northern Peru. He has been a member of La Prosperidad de Chirinos, a coffee grower’s cooperative, since 2012. Cristóbal has embraced technical support from the cooperative to improve farm management and post-harvest practices.

Born into a farming family, he grew up working the land alongside his parents and siblings, cultivating coffee as well as staple crops like corn, beans, and potatoes.

In 1994, Cristóbal began his own coffee journey after receiving one hectare of land from his parents. Starting with traditional varieties such as Typica, Bourbon, and Pache, he gradually expanded his farm and diversified his plantings to include Caturra and, more recently, Geisha.

Beyond production, Cristóbal is an active community leader, having served multiple terms as a delegate and representing his local village within the broader farming community.

Why We Love This Coffee

We are pleased to offer a gesha microlot from the Chirinos cooperative for a second year, building upon our 7 year purchasing relationship with the greater cooperative.

This coffee was profiled by Associate Roaster, Sylis A. “When profiling this coffee we chose a rather quick, high heat approach with a relatively short development time. The result is a balanced cup with moderate acidity, bright floral notes, and a pleasant round mouth feel.”

Good Coffee, Better Planet

Climate change is disproportionately affecting the tropical and subtropical regions where coffee is grown:

- 50% of global land area suitable for coffee production may be lost by 2050 due to climate change

- 60% of coffee species are considered at high risk of extinction

- 25M smallholder coffee growers are at risk of losing their primary source of income due to declining coffee yields

Regenerative agriculture--a practice of holistic farming where everything is seen as interconnected and vital--can build resilience to mitigate the effects of climate change and protect the future of coffee and our planet.

ROC® was established in 2017 to promote holistic agriculture practices in an all-encompassing certification that champions three pillars:

- Soil Health & Land Management

- Animal Welfare

- Farmer & Worker Fairness

In addition to being Regenerative Organic Certified® (ROC®), La Prosperidad de Chirinos is also Fair Trade certified.
