Origin Story

Tesfaye Bekele (Ethiopia)
Café Organico (Honduras)

The base of this blend is a mellow coffee from Mexico’s Chiapas and Oaxaca states. It was selected for decaffeination by our partners at Royal Coffee for its potential to become an excellent decaf. This coffee provides deep sweetness with brown sugar and molasses characteristics. It was decaffeinated using the water process at Descamex.

We then added a coffee grown on Finca Quequezques in Guatemala’s San Juan Sacatépequez region. The Delgado family has farmed coffee on these lands in the fertile highlands of San Juan Sacatepéquez for generations. Once a pine forest, Finca Quequezques is now a fully integrated coffee farm and mill operation, allowing the Delgados to maintain a high level of quality control over their output, working both with a focus on tradition and sustainability.

The name “Quequezques” comes from an indigenous name for a broad-leafed plant which grows in these mountain altitudes. It’s a fitting connection between the Delgado family’s business and the land, which with its rich volcanic soil (and temperate microclimate) is generous towards the production of beautiful coffee. And, of course, where coffee is grown in the gentle shade of native forests.

Several varieties, including many heirloom coffees, are grown here under a canopy of shade trees, guided by an agroforestry system established to provide resiliency to shifting climatic patterns and enhance soil richness. Grown in balance with nature, coffee production is not only more reliable, but quality and flavor attributes are also enhanced.

Why We Love This Coffee

Decaf Eye of the Tiger is a seasonally evolving espresso blend crafted with fresh, in-season coffees. Originally developed for our cafés, this decaffeinated blend remains a staple at all of our locations across California. We think of it simply as a delicious espresso—one that just happens to be decaffeinated. Both components are decaffeinated using a chemical-free water process.

While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:

1:2.3 Coffee to water ratio in 23 seconds
