Origin Story

Eyasu Worasa

This coffee comes from the Benti Nenka village in Hambela, where coffee crops are interspersed with other crops for the dual benefit of food production and shade for the coffee plants. The high altitude contributes to the vibrant and nuanced coffees the Guji region is known for.

Processing takes place at Eyasu Worasa’s Guduba mill, which has operated under the guidance and experience of Worasa for more than a decade. This lot of coffee is a natural process, bringing out sweet and fruity notes of dried apricot, baking spice, and orange zest.

Why We Love This Coffee

The decaffeination process used here is the Swiss Water Method, which removes caffeine without the use of chemical solvents. The beans are soaked in a water-saturated green coffee extract that contains soluble coffee components just below equilibrium with the beans. This allows caffeine—and some other soluble compounds—to naturally diffuse from the beans into the extract. The caffeine-laden solution is then passed through activated carbon filters, which selectively capture caffeine molecules. This process is repeated until the beans are 99.9% caffeine-free.

Associate Roaster Alex S. kept the total roast duration short to preserve the coffee’s fruity acidity, something easily masked in decaffeinated coffee.
