This is the eleventh consecutive year Equator has offered El Injerto's Red Catuaí variety — Red Cat for short — purchased directly from the farm. Originally offered as a filter coffee, this is the third year we are featuring it as a single origin espresso, where the Catuaí variety's juicy, dynamic, and fruity qualities evolve into chocolate covered raspberry and candied ginger.

How to Brew

Coffee: 18g

Water: 40g

Brew Steps:

1. Fill portafilter and tamp

2. Insert into machine

3. Brew for 26 seconds

Espresso is known for its intensly concentrated flavors. Enjoy it alone or pair it with steamed milk for a match made in caffeine heaven.

2. Reattach brew basket

About the Producer

El Injerto was founded by Jesús Aguirre Panamá in 1874, with the first coffee planted around 1900. Today El Injerto is managed by the fourth generation of the Aguirre family and is one of the most celebrated coffee farms in Guatemala. It continues to be a leader in national tasting competitions, having placed in the finals of Cup of Excellence fifteen times and amassed seven first place awards! Whenever we take the long journey into the highlands of Huehuetenango to visit El Injerto, we are impressed with the cleanliness, efficiency and beauty of their farm and mill.
