Luis and Oscar Monge grow this coffee on their farm Pie San in Costa Rica's Tarrazu region and process it at their own mill, La Lia. Using the red honey method, where trace amounts of fruit are left on the bean during drying, the coffee is cared for meticulously on raised beds to promote even drying, yielding a sweet, balanced, and complex cup.
