Origin Story

Haile Gebre

This fully-washed, decaffeinated coffee was produced by Haile Gebre, who grew up among the farms of Yirgacheffe, one of Ethiopia’s most storied producing regions. After being forced from the region as a child, it took Haile decades to return to coffee industry, but today, he is known as the “Godfather of Guji” due to his years of experience in local government, cooperative management, and coffee farming.

Gebre’s Shakisso is a 640-hectare, semi-forest farm, as well as a washing station that collects coffee from more than 300 neighboring smallholder farmers. Together with legendary producer Tesfaye Bekele of Suke Quto farm, Gebre has made a name for Guji over the last two decades in the specialty coffee industry, helping the region earn a reputation for nuanced, complex, and sought-after Ethiopian flavor profiles.

Along the way, Gebre and his colleagues have done much to improve farm management, processing, and agronomy. One program in, conjunction with importer Trabocca and external scientists, helped Gebre create a bespoke compost with ingredients that complement the soil Shakisso’s many outgrower farmers plant. Wastewater and pulp have also been treated with Effective Microorganisms to clean water and accelerate production of compost.

Decaffeinated coffees go through intense processing that can diminish the structural integrity of the beans, so generally we use a gentle application of heat throughout the roasting process to ensure we highlight the coffees’ inherent flavor characteristics. Decaf Ethiopia Shakisso Organic has a delicate flavor profile making gentle heat application even more paramount.

This coffee was decaffeinated using the Swiss Water Process of caffeine extraction, without the use of chemical solvents. The coffee soaks in a water saturated green coffee extract that contains soluble coffee components just under equilibrium with that of the coffee beans, so soluble coffee components such as caffeine, only flow out of the beans and into the extract. The caffeine laden extract then passes through activated carbon filters that catch the caffeine molecules and the process is repeated until the beans are 99.9% caffeine free.
