Originally developed as a decaffeinated espresso offering at our cafes, Decaf Eye of the Tiger is a seasonally evolving decaf espresso blend that features in-season coffees. We think of it as a delicious espresso that just happens to be free of caffeine.

Our current blend is fruity, full-bodied, and Certified Organic, blending decaffeinated beans from Ethiopia and Honduras.

    Origin Story

    Tesfaye Bekele (Ethiopia)
    Café Organico (Honduras)

The heart of the blend is a natural process coffee from Suke Quto, an Ethiopian farm in the Guji region. Suke Quto coffee farm is owned and operated by Ato Tesfaye Bekele, one of the people that helped to put the Guji region on the specialty coffee map. At nearly 550 acres, Suke Quto coffee farm, washing station and dry mill have become a force in the highlands of Guji. Suke Quto works with 171 neighboring farmers that deliver coffee cherries to the mill. Over 200 seasonal workers are employed to harvest and process the coffee. Their focus is on the production of environmentally friendly coffee in an economic manner that benefits the community. The goal is to help people earn a living income from sustainable coffee production. This coffee was decaffeinated using the water process method at Swiss Water in Canada.

To complement the fun and fruity coffee from Suke Quto we added a full bodied coffee from Honduras. The COMSA co-operative is continually innovating and experimenting with organic practices, always with the emphasis on preserving local plant life. This coffee was decaffeinated using the water process method at DESCAMEX in Mexico.

    Why We Love This Coffee

Decaf Eye of the Tiger is a seasonally evolving espresso blend crafted with fresh, in-season coffees. Originally developed for our cafés, this decaffeinated blend remains a staple at all of our locations across California. We think of it simply as a delicious espresso—one that just happens to be decaffeinated. Both components are decaffeinated using a chemical-free water process. Additionally, this iteration of Decaf Eye of the Tiger is Organic certified.

While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:

1:2.3 Coffee to water ratio in 23 seconds
