    This iteration of Decaf Eye of the Tiger Espresso is built around a coffee produced by members of the Gayo Mandiri Cooperative, located in the Gayo Highlands of Northern Sumatra. The group is managed by the Amin family, who have operated over 1,200 hectares of their own land since 1995. Gayo Mandiri is made up of over 1,000 local producers, who each own and operate their own small farm. The milling and final preparation is completed at a central mill in the nearby town of Takengon. The coffee was processed using Sumatra’s traditional wet-hull method, where the thin papery substance called parchment that surrounds all coffee seeds is removed before the coffee finishes drying. This processing method imparts earthy tones into the coffee, giving this version of Decaf Eye of the Tiger a unique flavor profile.

    We then included a pair of coffees from two of the world's most distinguished producing countries. The first was grown by smallholder farmers in the Popayan region of western Colombia. This coffee helps to bring the characteristics of the blend's other components into balance by adding flavors of dried fruit and a graham cracker-like sweetness. We like it so much that we have featured it as a single-origin offering in the past! The other comes from the Minas Gerais region of Brazil, and is a blend of natural and pulped-natural lots. Its sweet and subtly nutty flavors add complexity and depth to the blend, and together these coffees create a delicious espresso that pairs well with milk yet can stand on its own.

    Decaf Eye of the Tiger is a seasonally evolving espresso blend that features in-season coffees. We originally developed this decaffeinated espresso blend for our cafes, where we continue to serve it daily in all locations throughout California. We simply think of this blend as a delicious espresso that just happens to be decaffeinated. All components are decaffeinated using the chemical-free water processed method.

    While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
