This is the ninth year we are featuring coffee from Mauricio "Moe" Salaverria's farm, Finca Himalaya, which has been in the Salaverria Lagos family since 1875.

This natural process coffee from El Salvador achieves sweet and fruit-forward flavors that don’t overpower the inherent qualities of the Pacamara variety.

Origin Story

Mauricio Arturo Salaverria Caceres

This is the ninth year we are featuring coffee from Mauricio "Moe" Salaverria's farm, Finca Himalaya, which has been in the Salaverria Lagos family since 1875! Moe owns and operates several other small coffee farms under the banner, Divisadero Café Farms, and coffees from these farms consistently place well in coffee quality competitions such as Cup of Excellence. Moe cultivates many different varieties of coffee and processes them using a variety of methods, many of which we have featured in the past. In addition to the Bourbon variety lot that we purchase each year, this year we also decided to purchase this Pacamara variety lot after tasting it while visiting Moe in El Salvador.

Why We Love This Coffee

This coffee was processed at the Divisadero micro-mill located on Finca Villa Gallicia, one of Moe’s other nearby farms. Using the natural, or dry method of processing where the coffee cherries are left to dry on the beans fully intact, Moe achieved sweet and fruit-forward flavors that don’t overpower the inherent qualities of the Pacamara variety. The beans were placed on raised beds to slow dry on an area of the farm that receives a constant cool breeze, slowing down the drying process and increasing the intensity of the coffee’s flavor.

Pacamara is a cultivar that is a cross between the Typica derived Maragogype variety, which produces exceptionally large beans, and Pacas, a compact-growing selection of the heirloom variety Bourbon. As a result of this parentage, Pacamara plants are small in stature, but produce enormous beans known for their high cup quality and being notoriously challenging to roast. The coffee is delicate, and we choose to be gentle with our approach to the roast to bring out its complex range of flavors.
