Abby Muñoz

On the cool slopes of Hualālai in the Kona District of Hawaii’s Big Island, the team at Monarch Coffee are longtime friends and business partners of Equator. Inspired by Finca Sophia—co-owned by Equator founders Helen Russell and Brooke McDonnell—they set out to create their own world-class farm.

Just as Finca Sophia pushes the limits of coffee cultivation in Panama, Monarch Coffee Estate is redefining what’s possible in Kona. The second generation of farm leadership, Abby Muñoz's ongoing commitment to excellence has earned them numerous accolades, including multiple first-place finishes at the Hawaii Coffee Association’s annual competition, which draws entries from over 100 farms across the islands.

Why We Love This Coffee

Pacamara is a cultivar that is a cross between the Typica derived Maragogype variety, which produces very large beans, and Pacas, a compact-growing selection of the heirloom variety Bourbon. As a result of this parentage, Pacamara plants are small in stature, but produce enormous beans known for their high cup quality and being notoriously challenging to roast.

This particular lot was processed using the traditional washed method, in which the coffee fruit is removed after harvesting. The beans are then fermented and washed with fresh water to remove any remaining mucilage, resulting in a clean, citrusy cup. We've also sourced a natural-processed lot of the same coffee, giving customers an opportunity to explore how processing influences flavor.

Good Coffee, Better Planet

Monarch Coffee is deeply committed to sustainability and preserving the integrity of the land they cultivate. To protect local wildlife and waterways, they avoid using harmful chemicals and pesticides. Thanks to ample rainfall and an efficient water collection system, their water usage remains low.

They also recycle byproducts from coffee processing whenever possible—repurposing fermentation water for irrigation and using coffee pulp as organic fertilizer.
