Tigerwalk Espresso is built around a coffee produced by members of the Racafe Cooperative in the Cauca Department of Southwestern Colombia. This region is located just a stone's throw from the renowned Huila Department, famous for producing some of Colombia’s highest-quality coffees. As a result, the coffees from Cauca share similar qualities with those of Huila, offering rich flavors of dark cherry, ripe berries, and a full-bodied red wine profile. These deep, fruity tones form the foundation of the espresso blend.

To enhance this base, we add a fully washed coffee from Kenya, which adds flavors of citrus and a juicy acidity. Kenya’s coffee system is one of the best in the world for rewarding high-quality lots. After tasting, registered buyers participate in small auctions where the top lots fetch higher prices. Our partners often need to purchase multiple lots of similar quality and blend them together using a sophisticated grading system to achieve the desired flavor profile for our blend.

This natural processed coffee from the Bombe Mountains in Southern Ethiopia delivers vibrant, fruit-forward flavors to Tigerwalk Espresso. It’s processed at the Ayla Bensa Washing Station, which also operates a local buying station so nearby farmers can easily sell their cherries. Grown at high altitudes in a cool climate, the coffee matures slowly, producing small, dense cherries packed with complex flavor. After harvest, the whole cherries are dried intact, allowing the fruit to impart its distinct, fruity notes directly into the bean.

Our flagship espresso is roasted to highlight sweet, fruit-forward flavors found in the component coffees. The coffee spends more time in the roaster to coax these flavors out and tamp down the acidity, yielding a balanced and versatile espresso. We enjoy this coffee so much that we serve it at all of our cafes!

While there are many variables that contribute to dialing in espresso, here are the parameters that have been yielding the best results in our lab:
